Low-carb Zoodles!

Zucchini noodles are a surprisingly satisfying dish and can replace the carb heavy pasta that may leave you feeling weight down. To make zucchini noodles (a.k.a. zoodles) you may want to invest in a spiralizer that can be purchased most places kitchen items are sold. It is a great investment as you can make fun spirals for salads from carrots, cucumbers, beets and so much more! You can also make other types of "noodles" from sweet potatoes or butternut squash.

Zucchini holds a very low score on the Glycemic index and is an excellent vegetable for weight loss and blood sugar control. It is also low in calories, sugar and carbs. Additionally it has high amounts of potassium, manganese and antioxidants such as Vitamins A and C.


Olives are an excellent source of "good fats" and are considered a great anti-inflammatory food. Olives have been shown to block special histamine receptors (called H1 receptors) and thus lessen a cell's histamine response (i.e. inflammatory response).


 

Recipe

Serves 2


2 medium- large zucchinis spiralized

2 cups of cherry tomatoes (halved)


Top with Olive Tapenade - I like the Acropolis - Organic Kalamata Olive Tapenade


Additional topping options:


Top with grilled chicken breast, chickpeas and/ or some hemp seeds and/or pumpkin seeds!


Mix all ingredients together and enjoy!
